  • Stuffed Portabello Mushrooms

    Made these last night- a hit with all 6 of us.
    Stuffed Portabella Mushrooms - used 3 large mushrooms
    12 oz package sausage
    1/4 c finely chopped red pepper
    1/4 c finely chopped celery
    1/4 c green onions - about 4
    chop the mushroom stems
    Brown/saute together
    Remove from heat
    Add
    ​​​​​​1egg
    2t olive oil
    1/4 c bread crumbs
    1/4 c grated parmesan cheese
    Sprinkle of garlic powder- called for 2 t minced garlic but I didn't have
    Rub outside of Portabella with olive oil
    Remove the gills
    Stuff with mixture
    Top with sprinkle of bread crumbs and motzarella cheese
    Bake 20 - 30 minutes @ 400 til mushrooms are done and cheese is golden.

      I've had stuffed Portabella's from a restaurant. Now we will have to try this at home.

          I made these today. They we're good. I used minced onion instead of real onion, a packet of crushed red pepper from Pizza Hut instead of a fresh red pepper, and minced garlic from a squeeze bottle. I used 4 mushrooms and had quite a it of the stuffing left. I later realized that I used a pound of sausage. I think I'll vacuum seal it and will have them again later. I might even try adding some cream cheese in the stuffing. Thanks, Linda.
